Cranberry and White Chocolate Cookies

Since cookie baking is relatively new in my world, coming up with new cookie combinations has become a fun hobby for me.  I know my cookies are only semi-homemade because I cheat and use a cake mix as the cookie batter, but I still get to be creative with the flavors and kinds of cookies I can make.  The act of physically baking cookies brings some wonderful new appreciations to my life as well.  I love the smell of freshly made cookies coming out of my oven.  My kids can finally come home from school and enjoy that wonderful smell.  I also have never been able to bake cookies and give them out to anyone either. So it was such a great feeling to take my homemade cookies over to my parent's house for them to enjoy.  My husband even took some cookies to his poker game.  I feel like I have come a long way from the days of my hockey pucks and petrified terror when thinking about baking cookies.  I know the bakers out there must think I'm crazy (it's a cookie for goodness sake)... but when you have never been to the top of the mountain of cookie making heaven... you never get to appreciate the view.  The view from my semi-homemade cookies seems pretty wonderful and the sky's the limit.

Ingredients:
1 box of yellow cake mix
1 1/2 cups of white chocolate chips
1 cup of dried cranberries
2 eggs
1/2 cup of canola oil



Directions: 
Mix the cake mix with the eggs and canola oil.  Then add your white chocolate chips and dried cranberries and mix them in well.






 Make golf ball size balls from the cookie dough and place them on a sprayed cookie sheet.  Place them in a 350 degree oven for 14-17 minutes.  When the edges start to turn brown they are ready.
 Allow the baked cookies to remain on the cookie tray to cool completely and finish setting.  Store cooled cookies in an air tight container.


Makes 2 dozen cookies (24 cookies)  Enjoy.

  1. That's a great idea to use cake batter. I am a cookie lover but have trouble making them. They are either too hard or too soft. It's my struggle food. These look incredible. The combination of cranberry and white chocolate is perfect.

  7. Ramona! You underestimate your baking abilities! These look wonderful. I recently made cherry and white chocolate cookies for the cookie swap. Don't you just love tart and sweet together in one cookie? I'm sure your kids LOVED these! And I hope you had a WONDERFUL weekend!

  13. I can recommend the above cookies as my grandchildren and I ate quite an amount of cookies when Ramona gave it to us. They were so delicious moist as well as crispy that we all could not stop eating until we finished the whole box she brought for us. I am very proud to say that she my daughter could create such great recipes.
