Peppermint Bark Cookies

Yum

 T'is the season to bake cookies, so I am whole-heartily joining in!  My kids helped me make these cookies and they had a so much fun (excuse the mess of crushed candy cane everywhere, they are not the neatest kitchen helpers).  I have seen a lot of peppermint bark recipes around with white chocolate and crushed up candy canes, so I thought why not put some of that goodness on top of a cookie.  Now I was planning on using more white chocolate on top of my cookies, but due to my daughter sneaking white chocolate (while I wasn't watching) it had dwindled down to about a half a cup and I had to "stretch" it. We managed to make it work anyway and the cookies turned out really well.  So try these simple and fun cookies, they will definitely put you in the holiday spirit.

Ingredients:
1 box of yellow cake mix
1 cup white chocolate chip melted
3-4 candy canes crushed
2 eggs
1/2 cup of canola oil


Directions:
Mix the box cake mix, egg and oil to make your cookie batter.  Then place balls of cookie dough on a sprayed baking sheet and bake in a 350 degree oven for 13-15 minutes. When your edges begin to brown take the cookies out and allow them to cool on the baking sheet.  Apply a coating of white chocolate on top of the baked cookie and sprinkle with crushed candy canes.  Enjoy.

  2. Yum these look tasty, I love that you used crushed candy canes in the cookies. If you like oreos and have a Trader Joe's near you, I highly recommend their Candy Cane Joe Joe's (addicting).

    I have recently been experimenting with cookies made from cake mix so I love seeing different variations!

  8. Yum! I have been seeing a lot of cookie recipes lately using boxed cake mix and am curious to try it. These look delicious. Oh, and the crushed candy canes everywhere made for a beautiful picture!

  9. I did a sliding stop when I saw these. I was just about to go grab a healthy *cough* snack and saw these pop up as I was leaving. Scared the bejeezus out of my poor dog when I thumped back in. She was sleeping calmly under my desk. So thanks for making me hungry and waking up my dog. *giggles*

  13. I'm seeing peppermint recipes everywhere too, and I really want to make something using some! These are just making me want to get in my kitchen and start baking even more :) They look delicious! And I'm just like your daughter, I keep nibbiling away at the chocolate chips, and I realize I don't have enough!

  19. These look great! My mom used to make cake mix cookies when I was growing up but hers never looked like that! Congrat's on the top 9. I'm glad to see your cookies because let
    's face it, they don't always look like the pictures in the magazines but I bet your's are AMAZING!
