Watermelon and Lime Granita

 Well, I did it again, I bought a not so great watermelon. My husband refuses to eat a watermelon that is not crisp and "crunchy" with every bite.  So when he cut into this perfectly looking watermelon on the outside and saw the very ripe and somewhat mushy inside he was ready to throw it in all the garbage.  NOT me.  I took one look at the watermelon and said, "I'll take over from here." So I put it through a blender and made this fabulous granita.  My kids and even my husband could not believe that that mushy watermelon morphed into such a fantastic refreshing treat.  I couldn't believe how easy it was and what a beautiful presentation it had when I served it up.  So the next time you get a mushy watermelon... try this quick frozen treat to fix it.


Ingredients:
1 seedless watermelon
2-3 large limes (to taste)
sugar to taste (if needed)

 Optional ingredients:
4-5 fresh mint leaves


Directions:
Cut watermelon and place all watermelon chunks in a blender. Blend until very smooth.  Strain through a mesh strainer and remove any pulp.  Squeeze lime juice to taste. Add sugar if watermelon is not sweet enough.  I did not need to add any sugar.  Pour into a 9- x 13-inch freezer safe dish. Freeze, stirring and scraping with a fork every 30-45 minutes, until all of the liquid has frozen. This should take about 3-4 hours.  Scrape with a fork before serving and serve with more lime wedges. Keep frozen. Enjoy.
