Banana-Blueberry Bread with Surprise

This recipe uses two ingredients I always have for healthy eating.. blueberries and bananas.  So I decided it's time for the blueberry to meet the banana and make some bread.  I also wanted to add a little "surprise" of cream cheese in the middle.  What a fun treat with each slice.

Wet Ingredients:
2-3 bananas mashed
1 cup sugar (or splenda)
2 tsp of vanilla
1 tsp of ground cinnamon
2 large eggs
½ cup of applesauce
1½  cups fresh blueberries

 Dry Ingredients
1 cup whole wheat flour
1 cup all-purpose flour
½ tsp of baking powder
1 tsp of baking soda
½ tsp of salt


Surprise cream cheese filling:
6oz of softened cream cheese
1 egg

Mix the two ingredients together until creamy.




Directions:  Separately mix the wet and dry ingredients.  Combine the wet and dry ingredients together and do not over mix the batter.  Fold in the blueberries.  Spray or butter a loaf pan.  Flour the bottom of the pan with some flour.  Pour half the batter into the pan.  Next spread the cream cheese filling in the middle.  Top off with the remainder of the batter.  Bake in a 350 oven for 45-55 minutes or until bread is done.   Allow to cool and slice.  Enjoy.
