Fruit Pizza

Yum

 I proclaimed this would be veggie week, but the kids wanted to do something with fruit in it instead for Kids in the Kitchen.  So we made a dessert fruit pizza and boy oh boy was it delicious!  We used a few store bought ingredients, and our favorite fruits to top this pizza.  This is a perfect dessert to serve for a pizza party... but it works any time because it's simply yummy.






 Ingredients:
Store bought Sugar Cookie roll
8 oz cream cheese (at room temperature)
1/4 cup powdered sugar (or splenda for low-sugar option)
1/2 cup each -fruit of choice (strawberries, blueberries and kiwi works great)

This recipe makes two (8-9 inch) Fruit Pizzas


 Directions:
 Cut sugar cookie dough into slices and place around greased or sprayed nonstick pizza pan.  Then press together to form one crust.  I used the back of a spoon that I sprayed with cooking spray to make this task easy.  Bake in a 350 degree oven for about 15 minutes or until crust starts to get golden at the edges.  Allow crust to cool completely on pizza pan.

Prep fruit by cutting it if needed. If using blueberries keep them whole.  Use electric mixer to whip the softened cream cheese and sugar together.   Note: you can add more sugar to taste. Remember the sugar cookie crust will make the dessert sweet too.

Once cookie crust has completely cooled top with some of the cream cheese mixture.  Top with prepared fruit.  Serve immediately or keep chilled until you serve.  Enjoy.
