Welcome to Day 4 of Lunchbox Week. I remember eating A LOT of peanut butter and jelly sandwiches growing up for lunch. My kids get a PB and J sandwich at least once a week in their school lunchbox since it keeps well without refrigeration. I saw this "hot dog" version using a banana all over Facebook a few weeks back and I knew that the kids would love to try it. I was right... because they really enjoyed it and they loved how fun it was to eat. To complete the meal, I made some apple fries. The trick to keeping these fries from discoloring is to slice and place them in some salted water for a few minutes. We dipped the fries in some more strawberry jam. I don't own a lunchbox of my own, but these lunchbox meals are too tempting for this Mom. I made a "hot dog" for myself and enjoyed it very much. Yum! Yum!
Ingredients:
Hot Dog Buns
Bananas
Jam or jelly of choice
Peanut butter
For Apple Fries:
Apple
salt
water
Directions:
Apply Peanut Butter on both sides of hot dog bun. Place peeled banana and apply jam as a "ketchup" garnish. For apple fries, peel apple and slice. Place sliced apples in salted water to keep from browning. Place on paper towel to dry. Enjoy.
