Ingredients:
6 hard boiled large eggs mashed with a fork
1Tbs of yellow mustard
2-3 heaping Tbs of mayo (depends on how creamy you like it) Low fat mayo is fine, do not use fat free
2-3Tbs of finely diced celery
2-3Tbs of finely diced onion
1Tbs of pickle relish for sweetness (optional)
1/4 cup of shredded cheddar cheese or a slice of American cheese on your sandwich will be good too
1-2 Tbs of finely minced jalapeno or serrano chilies (if you want to make it extra spicy keep the seeds and the ribs, if you want it less spicy take the seeds and ribs out)
Salt and Pepper to taste. Go heavy on the pepper and light on the salt because the cheese has salt
Directions:
Mix all ingredients together. Makes 4-6 sandwiches. I like my bread lightly toasted and a layer of arugula leaves or lettuce leaves as a base on the sandwich. A slice of tomato is good too. Enjoy.
Note: Customize the egg salad to your taste. If you do not like raw onions, omit them. If you do not like celery omit them. :) Keep the chilies and cheese... they are the key ingredients here.

ReplyDeleteRamona! I just LOVE egg salad! Though I must admit, mine is rather boring. But I boil a dozen or so hard boiled eggs every week, just to eat for breakfast on the fly. Sometimes when I put pickle in it...I think I'm really jazzing it up! But I love your addition of chiles....now THAT will take the bland out of my sandwich!
