April Fool's Day Meatloaf and Mashed Potato Cupcakes

 Yesterday, I played an early April Fool's joke on my kids.  I asked them if they wanted to eat cupcakes for dinner.  They shouted a very loud and happy "Yes!".   My husband gave me a quizzing look... "cupcakes for dinner??"   Well... it was actually meatloaf and mashed potatoes that looked like a cupcakes... April Fool's!   I served it with a big green salad to complete the meal.  They may have not been the real deal cupcakes my kids were expecting, but it was fun to pretend we were eating cupcakes for dinner.  Hope you have a wonderful and fun April Fool's day and you don't get too fooled.

Ingredients:
For Meatloaf:
2lbs ground chicken, turkey or lean beef
4 eggs
3 slices bread
1/4 cup milk
1 tsp granulated garlic
1 Tbs paprika
1 tsp dried basil
1 tsp dried oregano
red chili flakes to taste
seasoning salt or salt to taste
black pepper to taste

Mashed Potatoes:
4 large potatoes peeled
2 Tbs butter
1/2 cup milk
salt and black pepper to taste

Directions:
Soften and crumble bread with milk.  Then mix with eggs.  Add all seasoning and ground meat of choice and mix well.




Spray muffin pan with cooking spray and fill wells 2/3 up the way up.  Bake in a 375 degree oven for 30-40 minutes or until fully cooked.  Pipe mashed potatoes using a piping bag or a plastic sandwich bag with a corner tip cut.   To garnish with "sprinkles" finely mince bell pepper.  Enjoy.
