Ingredients:
1 box yellow cake mix
3 large eggs
1 cup Greek Yogurt (you can substitute sour cream)
1/2 cup plain coffee at room temperature (prepared strong)
1/4 cup canola oil
1 tsp vanilla
Swirl:
1/2 cup all purpose flour
1/2 cup melted butter
1/4 cup brown sugar
1 Tbs ground cinnamon
1/2 cup almonds
Topping:
1/3 cup brown sugar
2 tsp cinnamon
1/4 cup almonds
Directions:
Whisk together eggs, Greek yogurt, vanilla, chilled plain coffee and canola oil. Then add the cake mix and whisk until smooth.
Butter or spray a baking pan. I used a 9x13 size pan. Put a little more than half the cake batter into pan. Then top with the swirl mixture. Finish off with the remaining cake batter. Take a knife and drag in a swirling pattern
Top with cinnamon sugar and almond topping and baking in a 350 degree oven for 45-50 minutes or until you can insert a toothpick and it comes out clean. Serve hot or at room temperature. Enjoy.
