Cinnamon and Almond Swirl Coffee Cake

Do you love the smell of coffee?  I love opening up a bag of roasted coffee beans and inhaling slowly. It simply wakes up all my senses.  I was asked by the folks at Puro Fairtrade Coffee to come up with a recipe using their coffee.  Their coffee is wonderfully rich and delicious.  It's also a coffee you can feel good about drinking since fairtrade to the coffee grower is key to Puro.  My husband was so excited for me to do this post because he is a major coffee fan as well as a cake fan. So it was an absolute win-win for him.  I was thrilled how wonderfully this coffee cake turned out.  It was the perfect treat to enjoy with a nice hot cup of coffee.


Ingredients:
1 box yellow cake mix
3 large eggs
1 cup Greek Yogurt (you can substitute sour cream)
1/2 cup plain coffee at room temperature (prepared strong)
1/4 cup canola oil
1 tsp vanilla

Swirl:
1/2 cup all purpose flour
1/2 cup melted butter
1/4 cup brown sugar
1 Tbs ground cinnamon
1/2 cup almonds

Topping:
1/3 cup brown sugar
2 tsp cinnamon
1/4 cup almonds




Directions:
 Whisk together eggs, Greek yogurt, vanilla, chilled plain coffee and canola oil.  Then add the cake mix and whisk until smooth.

Butter or spray a baking pan. I used a 9x13 size pan.  Put a little more than half the cake batter into pan.  Then top with the swirl mixture.  Finish off with the remaining cake batter. Take a knife and drag in a swirling pattern

Top with cinnamon sugar and almond topping and baking in a 350 degree oven for 45-50 minutes or until you can insert a toothpick and it comes out clean. Serve hot or at room temperature.  Enjoy.
