1 box yellow cake mix
3 large eggs
1 cup Greek Yogurt (you can substitute sour cream)
1/2 cup plain coffee at room temperature (prepared strong)
1/4 cup canola oil
1 tsp vanilla
1/2 cup all purpose flour
1/2 cup melted butter
1/4 cup brown sugar
1 Tbs ground cinnamon
1/2 cup almonds
1/3 cup brown sugar
2 tsp cinnamon
1/4 cup almonds
Whisk together eggs, Greek yogurt, vanilla, chilled plain coffee and canola oil. Then add the cake mix and whisk until smooth.
Butter or spray a baking pan. I used a 9x13 size pan. Put a little more than half the cake batter into pan. Then top with the swirl mixture. Finish off with the remaining cake batter. Take a knife and drag in a swirling pattern
Top with cinnamon sugar and almond topping and baking in a 350 degree oven for 45-50 minutes or until you can insert a toothpick and it comes out clean. Serve hot or at room temperature. Enjoy.
Puro Fairtrade Coffee's Story....Puro was created in 2005 and since its conception, has always sourced Fairtrade, organic and shade grown coffee. They recognize that people are more aware these days and want to know that they are purchasing a product that comes from a conscious heart and therefore paving a way for a better future. Puro Fairtrade Coffee is at the forefront of buying and protecting rainforests and are actively working alongside the World Land Trust, whose patron is Sir David Attenborough. For every cup of coffee sold, money is given to buy and protect areas of rainforest in South America. To date, they have saved over 5,600 acres (approx 6,000 football fields) of rainforest across 3 Puro reserves in Ecuador, Brazil and Colombia with the help of our loyal clients.
Here is a short Puro film (a documentary brought to you right from the heart of the South American Rainforests, and filmed recently by Puro on their ongoing projects). You can watch online at www.vimeo.com/fairtradecoffee/
