Ingredients:
1 cup blueberries fresh or frozen
1 1/2 cups fresh pineapple chunks (no core)
1 large banana (frozen)
2 cups coconut milk (I used the refrigerated kind found near the milk)
2 tsp chia seeds (optional)
sweetener of choice to taste- I used agave

Place coconut milk in blender then all other ingredients. Note: I like to have some of the fruit frozen so the smoothie gets nicely chilled without using ice that will dilute the flavors. Blend until smooth and serve chilled. enjoy.

I love using frozen bananas to make smoothies because I don't like the grainy texture that the ice gives. I can never get it nice and smooth with ice. I've never thought of using coconut milk though. That's a brilliant idea!

ReplyDeleteThis is a lovely smoothie. It looks and sounds delicious. I love your combination of fruits. Also, I had never thought to freeze pineapple, so thanks for the tip. I have a question, however. Is the coconut milk that you use the same as the coconut milk that comes in a can or is it something completely different? Is it as thick like canned coconut milk?
ReplyDeleteHi Terri, the coconut milk is the kind found by the milk in a carton. It's actually called a coconut milk beverage. It's not as thick as the canned stuff. :)

YAY SMOOTHIES!!! You know I love them, and I adore the combo of pineapple, blueberry, and banana. Oh and the coconut milk? Tropical perfection! :D
