Pineapple Blueberry Banana Smoothie (Vegan)

I love to have frozen fruit in my freezer at all times.  If you have bananas that are getting ripe and you don't plan on eating them soon, always peel, slice them and then put them into freezer safe bags portioned per banana.  These frozen bananas are perfect for making your smoothies sweet naturally and chilled without the need to use ice cubes that dilute smoothies. I also freeze pineapple, mangoes, blueberries, strawberries and grapes.   This tasty smoothie is full of my frozen bananas, blueberries and a fresh pineapple.  It's a lovely smoothie made with coconut milk so it's dairy free and vegan friendly. Ingredients:
1 cup blueberries fresh or frozen
1 1/2 cups fresh pineapple chunks (no core)
1 large banana (frozen)
2 cups coconut milk (I used the refrigerated kind found near the milk)
2 tsp chia seeds (optional)
sweetener of choice to taste- I used agave

Directions:

Place coconut milk in blender then all other ingredients.  Note:  I like to have some of the fruit frozen so the smoothie gets nicely chilled without using ice that will dilute the flavors.  Blend until smooth and serve chilled.  enjoy.

  1. I love using frozen bananas to make smoothies because I don't like the grainy texture that the ice gives. I can never get it nice and smooth with ice. I've never thought of using coconut milk though. That's a brilliant idea!

  3. This is a lovely smoothie. It looks and sounds delicious. I love your combination of fruits. Also, I had never thought to freeze pineapple, so thanks for the tip. I have a question, however. Is the coconut milk that you use the same as the coconut milk that comes in a can or is it something completely different? Is it as thick like canned coconut milk?

    1. Hi Terri, the coconut milk is the kind found by the milk in a carton. It's actually called a coconut milk beverage. It's not as thick as the canned stuff. :)

  6. Blueberries will be on my grocery list this week. I will do my best to use them in this smoothie rather than muffins or a cake!
