Ingredients:
Dry Ingredients:
3 cups all purpose flour
1 Tbs baking powder
1/2 tsp salt
Wet Ingredients:
1 cup buttermilk ( or regular milk)
2/3 cup applesauce
2 eggs
1/2 cup brown sugar
1/2 regular white sugar
1 Tbs cinnamon
1/4 tsp grated nutmeg
2Tbs butter
2 cups finely diced peeled apples (any variety of apple works)
Garnish:
1 tsp cinnamon
2 Tbs regular sugar
Directions:



Fill muffin pans (either lined with cupcake liners or sprayed with cooking spray/butter). Sprinkle with garnish and bake in 375 degree oven for 17-20 or toothpick comes out clean from center. Makes 18 large muffins.

Hehe! your kids sound like my husband. He is so particular with what fruit he deems acceptable to eat. We always have baking fruit around. Pretty muffins!

ReplyDeleteRamona...I always have a bowl of apples and fruit out on my counter. But I'd rather have a dozen of these beauties! I think my favorite part would be the sugary topping also. Apples and snickerdoodles.....not a bad breakfast! : )

ReplyDeleteThey turned out great! I even used 1.5 cups of white flour and 1.5 cups of whole wheat flour to boost the nutritional value of the muffins.
