
We celebrated Valentine's Day this week and what a sweet week we had. My star ingredient this week had to be strawberries. I always say that strawberries are perfect for Valentine's Day because of their beautiful red color and heart shape. I kept to the fruit theme this week by also making a fun and bright Clementine cocktail to enjoy.
The day after Valentine's Day, I had to end the week with my true love... Curry. I made an ultra healthy vegan lentil curry with chana dhal lentils and spinach. I usually serve lentil curries with rice and several other curries. But this is such a satisfying dish that I would have been very happy to eat it alone with rice and not feel I was missing anything.
So I hope everyone had a special Valentine's week since Valentine's Day has passed and we won't see all the pink/red hearts and flowers for another year. It sure was fun while it lasted....now here's my week in review...
