PANCAKES:
1 cup Pamela’s Pancake and Baking Mix
2 Tbsp unsweetened cocoa powder
1 large egg
3/4 cup buttermilk
1/4 cup sour cream
1 Tbsp red food coloring
1 tsp vanilla extract, divided
3 Tbsp unsalted butter, melted
CREAM CHEESE GLAZE:
4 oz cream cheese
1 tsp vanilla extract
1/4 cup powdered sugar
1 cup Pamela’s Pancake and Baking Mix

CREAM CHEESE GLAZE:
4 oz cream cheese

1/4 cup powdered sugar
Directions:
1. Whisk pancake mix and cocoa powder in a large bowl.
2. In a separate bowl or stand mixer, beat egg with
buttermilk, sour cream, food coloring and 1 teaspoon vanilla extract
until smooth. Gradually add flour mixture and melted butter. Whisk until
smooth.
3. Make glaze by whisking together cream cheese, vanilla and powdered sugar in a separate bowl.
4. Heat a large nonstick pan or griddle over medium
heat, then drop in 1/4 cup batter to form pancakes. Flip when the bottom
of the pancake is set and bubbles are forming on top. Cook until firm
and fluffy all the way through.
5. Serve with glaze and chocolate syrup.
