Avocado, Banana and Pineapple Smoothie (Vegan)

Yum
I bought a bunch of avocados to make guacamole for the Super Bowl.  I have some left so I decided to throw it together with some of my favorite smoothie flavors and make this smoothie.  Score!  This was a refreshing and delicious way to use up those avocados. :)

Ingredients
1 ripe avocado
1 ripe banana
1 cup pineapple juice
1 cup coconut milk (the drinkable kind of coconut found by the milk in the grocery store, not the canned cooking variety)
Agave, stevia or splenda to taste  (non-vegans can use honey)
ice if needed

Directions:

Put all ingredients into blender and blend until smooth.  If you prefer a drink that does not get diluted by ice in the blender, slice and freeze the bananas so they become the ice in the smoothie.
Note:  I wanted to make sure my smoothie was ultra smooth so I strained through a sieve before serving.  Served chilled.  Enjoy.

  8. These looks so pretty. I sometimes use frozen or fresh pineapple but never juice. I will have to get some of that to add to my smoothies.
