Chocolate Coffee Cake with Almonds

It's February 1st and we are officially one month into the year 2013.   I decided to celebrate with a sweet treat so I made this cake. Chocolate, coffee and almonds... not a bad way to kick of February. :)


 Ingredients:
1 box Devil's Food Cake Mix
Strong Coffee as needed
1 cup sliced almonds (divided)
3/4 cups chocolate chips

Chocolate glaze:
1 1/14 cups chocolate chips
2 Tbs butter or margarine
2 Tbs milk


Garnish:
1/4 cup sliced almonds toasted

Directions:
 Mix cake mix as directed by box.  Substitute strong coffee for the required water in the recipe.  Add 3/4 cup chocolate chips and 3/4 cups almonds into batter.   Spray or butter bundt pan well the add about 1/4 cup of almonds on the base of pan as shown.

Pour batter into pan and bake in a 350 degree oven for 40-50 minutes or until set.   Allow cake to cool a bit then top with chocolate glaze and the toasted almonds.  Note: Easily toast almonds by placing in oven on a tray when cake is finished baking.  The residual heat in oven will toast almonds.  Once cake is garnished, slice and serve.  Enjoy.


Glaze Directions:  Place all ingredients in heat proof bowl over a double boiler or in microwave. Melt until smooth and pourable.

  11. What a stunning cake! The dripping glaze looks incredible. Of course, I'd have to remove the nuts for the hubby, but he would love it with that little adjustment....though I love the way they look and their delicious crunch. Have a great weekend, my friend!
